Winter, a time to focus on eating a variety of vegetables

daves market update 20th june 2017I love winter for so many reasons… The days are so fresh, the air is crisp and you can see all the way to the mountains.  The food that we eat in winter is so nourishing, warming and comforting.  I love making soups, slow cooked meat and vegetable meals… We all want and like to eat more hearty filling foods in winter.  It’s natural but it’s also easy for a kilo or two to sneak on without even noticing.

A few things to be mindful of when enjoying the comfort foods of winter.  Eat your meals slowly, give your gut the time to digest the food you are giving it and enjoy each wholesome mouthful, I promise you will fill up on less food.

I love slow cooked meals it’s a great way to get lots of nutrients into a one pot wonder during winter.  The process of slow cooking preserves the enzymes in meat and vegetables, the low heat extracts the cartilage, marrow and minerals from the meat and vegetables.  You can also cook with economical cuts of meat like the chuck, cheeks and shanks.  There is so much flavour that comes out of cooking something on low heat for a longer period of time.  Use the veggies as the base of your dish.  To avoid the extra kilos go for nutrient dense vegetables don’t bulk up your stew with the humble potato try to incorporate the colours of the rainbow in your dish, variety is the key.  With a variety comes more minerals, vitamins and antioxidants.  All of which our bodies need to fit off the winter germs.

Always put your vegetables first!!  Enjoy the nourishment that comes with winter.
